A Vegan and GF Breakfast

For many years my breakfast consisted of two toaster waffles covered with peanut butter and some fresh fruit. When my favorite toaster waffles from Trader Joe’s became unavailable I suffered with the vastly inferior Vans GF waffles for a while, but eventually switched to toasted bread instead.

Because of my Celiac disease I need to supplement Calcium, D3 and B12. My gut rejects B12 tablets but if I crush them and mix with peanut butter it’s all good.

This morning I used New Cascadia bread, I often use Happy Campers bread too.

This is a typical breakfast, with navel orange for the fresh fruit component.
