I found an online seller offering GF and vegan tortellini and ordered a six pack. The product is frozen and ships in a cooler pack with dry ice. It arrived yesterday and since the kids were going out for Fast Food Wednesday I cooked a batch for myself.
Taste Republic sells their GF vegan tortellini with vegan cheese or vegan sausage filling. I ordered the cheese. It felt great to be able to eat tortellini again after over 25 years without. After boiling it for about 2 and a half minutes it was slightly al dente, but I ate the whole package with about a half jar of Carbone Roasted Garlic tomato sauce (Albertsons). I quite liked it and will likely cook two packs of it for family dinner on Friday.
With shipping I paid about 60 dollars for 6 packages. Will buy again and try the vegan sausage variety.
