On Fridays it is my turn to cook dinner for the family. Recently I’ve been preparing a pasta dish with corn on the cob because the kids will eat it. I create a meat sauce with meatballs.
I start with an onion and garlic, of course. Then some Impossible ground, imported Italian pasta sauce, Italian tomato paste, Impossible meatballs, and some home grown oregano. For pasta this week I used Tinkyada gluten free penne, a brand we have enjoyed for many years.
The corn on the cob is baked without husking it first at 375 degrees for half an hour. I put the ears directly on the oven rack. It is very easy to remove the husk and silk after it has been baked.
Our small person has been doing a great job with the corn on the cob. It is a popular item with the whole family.
Except for the GF pasta, this dinner includes ingredients found in our local Albertsons supermarket.
