With the New Cascadia bread gone I’m back to my usual breakfast of toasted Happy Campers bread, toasted, and covered with peanut butter. I sprinkle it with a crushed B12 tablet, and enjoy fresh fruit on the side.
Today it was their Buckwheat Molasses bread which is very nice, I’ve also had their Hemp Hemp Hooray bread which tastes a little bit better but is more prone to voids. All in all I think the Happy Campers bread is the best GF and vegan bread I’ve ever had. It is certified GF. It is also organic which in my opinion is not a benefit, but I don’t mind.
Both varieties of this bread I have tried offer a unique and pleasant flavor.
Because they use whole grains it is probably more nutritious than most other GF breads because it includes fiber and more nutrients. Many other GF breads are mostly refined starch.

Beyond Meat Burger on O’Doughs Thins Sandwich Roll
For months now my most eaten lunch has been a Beyond Meat burger patty on an O’Doughs Thins sandwich roll. I love the O’Doughs products, they are the best GF baked goods I’ve had in over 25 years.
O’Doughs makes bagels, hamburger buns (which I don’t like as much) and a product they call Thins, often listed as Sandwich Bread, that I dee diddly love. I separate the top from the bottom by gently running my finger between them. This is needed because they are moist and get a bit stuck together in shipping. Once toasted they are still soft and uniquely delicious.
Recently I’ve been adding sliced pickles or pickle relish. This makes a complete lunch for me.
Beyond Meat burgers are widely available in supermarkets. You can buy O’Doughs products from Amazon, Gluten Free Palace or Gluten Free Mall. They are made in Canada so thanks to Big Brother the prices may be going up soon.

A Vegan and GF Breakfast
For many years my breakfast consisted of two toaster waffles covered with peanut butter and some fresh fruit. When my favorite toaster waffles from Trader Joe’s became unavailable I suffered with the vastly inferior Vans GF waffles for a while, but eventually switched to toasted bread instead.
Because of my Celiac disease I need to supplement Calcium, D3 and B12. My gut rejects B12 tablets but if I crush them and mix with peanut butter it’s all good.
This morning I used New Cascadia bread, I often use Happy Campers bread too.
This is a typical breakfast, with navel orange for the fresh fruit component.

New Cascadia Traditional and Plant Provisions Hoagie
Call it a grinder, a hoagie or a submarine sandwich, who doesn’t love them?
I was missing having a hoagie recently so when I stumbled across the website for New Cascadia Traditional baked goods I was very curious. I had previously had some Plant Provisions GF and vegan lunch “meat” and it occurred to me to put them together.




The New Cascadia roll was much more like a short baguette than a traditional sub roll. It has a hard outer crust and inside it is much like a wheat based baguette, with no voids and a slightly off white color. The Plant Provisions fake meat is delicious. It is sliced very thinly so you’ll likely want to use a few slices.
It made a fairly satisfying and very filling lunch, I liked the flavor and would rate the assembled meal at about an 8 on a scale of 10.
